This first edition of the Tanzania eCook Book focuses on energy-efficient cooking, specifically the opportunity for cooking with electric appliances.In achieving the goal for the transition from inefficient use of biomassto clean cooking solutions, we have introduced highly efficient electric cooking appliances, specifically the Electric Pressure Cooker (EPC) asthe appropriate ultimate clean cooking solution for the Tanzanian context.

The book starts by presenting the current cooking situation in Tanzania,fuels currently used and related appliances, indicating the gap and opportunity for modern energy cooking services. The main section focuseson the highly efficient EPC, enlightening its advantages and how it canbe used and adopted in cooking many of the Tanzanian staple foods.

The book also provides evidence on how cooking with efficient electrical ppliances is possible, cost efficient, time saving and clean. It goes further on how one can save even more energy and money through better kitchen management practices. The twin challenges of lack of awareness and lackof availability are addressed in the final section of the book.
